Today We Get Answers Well Maybe

Today we do not get to see the surgeon, but instead the PA, not surprising considering our healthcare here in NH.

I will say his recovery after all that has taken place has been amazing actually. He is walking better than ever and staying awake a lot more hours of the day then he had been, except while at work he dragged himself daily to do his job, feeling lousy.

The gardens have been producing so many tomatoes. I roasted them then peeled off the skins and cooked them on simmer until they thickened then I placed them in freezer bags once cooled and froze them flat for later use in recipes where I will need a cup or so.

My Instagram and Facebook spaces have many photos of what those 40″ of summer rains brought me, and I am sorry to hear that across the pond, in many countries, nasty storms have plagued many as well. I am not sold 100% on global warming though. I know the desecration of gorgeous land to house more and more humans, has to take its toll, I am not sure what the answer is, as we just have one earth to call home. I do my part to eat from the land locally and to conserve water as well as use less fuel.

Stay safe everyone!
Eunice

  1. Glad he’s doing well. I know what you mean about global warming… maybe we are going through a warmer phase, but you only need to look back in history and our climate has always fluctuated! (People should be focussing on cleaning up our environment instead… ) Enjoy the rest of your summer Eunice. 🤗

    1. Thank you Cathy. I am back to work part time come Monday at 6 am and will work until 10. I hope to work Mon-Thursday this week 5 hours or so daily. Then to can the rest of my tomatoes and make a yummy veg. lasagna. Eggplant and zucchini and my fresh made sauce and a non-dairy /vegan cheese :)

  2. Beautiful shot, Eunice!
I sure know what you mean about tomatoes! My hubs was harvesting bas daily.
I was a tomato slave: stewing, making sauce, drying, saladas.
But they are tasty, and all the work will pay off in the winter! xoxo

Love to hear from you
