just another healthy muffin recipe




Want a really great tasting muffin that’s healthy for you too?! Try this one- it’s loaded with fruity goodness!!

What you need:

1 1/2 cup whole-wheat flour
1 1/2 teaspoon baking powder
1/2 teaspoon baking soda
2 teaspoon cinnamon
1/2 cup crushed pineapple, drained
1 cup cubed papaya
1/3 cup vanilla yogurt
1 egg, beaten
2 tablespoons unsweetened applesauce
1/4 cup brown sugar
1/4 cup honey
1/4 cup chopped walnuts
1/2 cup whole cranberries, halved
1/2 cup blueberries

Makes 12 medium muffins

What you do:

Preheat oven to 375 degrees F. Line muffin tin with paper liners.

In a large bowl whisk to combine flour, baking powder, baking soda, and cinnamon.

Using blender or food processor, puree pineapple, papaya and vanilla yogurt (this smells wonderful!). Mix in egg, applesauce, brown sugar, and honey.

Add pineapple mixture to flour mixture. Stir to combine.

Fold in walnuts, cranberries and blueberries.
